As well as being a special place to stay in lovely, comfortable bedrooms, this civilised restaurant-with-rooms has now been run by the charming Mr Carter for well over 30 years and the atmosphere is friendly and relaxed. Of course, much emphasis is placed on the exceptional food but there is a welcoming bar with an open fire and Black Sheep Best and Timothy Taylors Best on handpump - and locals do still pop in for a pint and a chat. There's a very sensible and extensive wine list with 20 by the glass (including champagne), over 40 malt whiskies, several russian vodkas and Thatcher's cider; maybe quiet piped music. Benches and tables outside and seats in the pretty garden; croquet. As well as their own fishing on the River Nidd, this is an ideal spot for walkers, hikers and ornithologists, and there are plenty of country houses, gardens and cities to explore.

Using butchers who breed their own animals, trout from the next village, game shot under a mile away and fish and shellfish delivered six times a week, the first-class food might include lunchtime sandwiches, king scallops with minted pea purée and grilled pancetta, home-cured gravadlax with crème fraîche and their own quail eggs, chicken stuffed with wensleydale cheese and ham with a tarragon and mushroom sauce, best end of nidderdale lamb with creamed cabbage, roasted garlic and cherry vine tomatoes, gressingham duck with cherries, oranges and preserved lemons, and venison on aubergine chutney with home-made plum jam.
